Recipe Description
A creamy chicken salad filled with fresh snow peas and sweet balls of melon. A great choice for potlucks or ladies luncheons.

8 Ounce(oz)  snow peas, trimmed
1 Cup(c)  quick cooking brown rice, cooked according to package directions
3 Cup(c)  cooked chicken, diced
6 Ounce(oz)  pineapple chunks, drained
4   scallions, including tops, finely chopped
2   small cantaloupes, halved and seeded
1/2 Cup(c)  plain low fat yogurt
1/2 Cup(c)  reduced calorie mayonnaise
3 Tablespoon(T)  lemon juice
2 Teaspoon(t)  curry powder
1/2 Teaspoon(t)  salt
1/4 Teaspoon(t)  black pepper
3 Tablespoon(T)  fresh coriander, minced


Using a melon baller, scoop out balls from the cantaloupes, placing them in a large bowl. Wrap the scooped out melon halves in plastic food wrap. Cook the snow peas, uncovered, in a large saucepan of boiling water for 1 minute, or until crisp tender. Drain, rinse under cool water, drain again, then slice crosswise into strips 1/4 inch wide. Add the snow peas, rice, chicken, pineapple and scallions to the bowl with the cantaloupe balls. Toss lightly. Transfer the mixture to a plastic container and snap the lid on tight. For the dressing: In a large measuring cup, whisk together the yogurt, mayonnaise, lemon juice, curry powder, salt, pepper and coriander until smooth. Pour the dressing into a plastic container and snap the lid on tight. Refrigerate the melon halves, chicken mixture and dressmg until ready to transport. To serve, mound the mixture in the cantaloupe halves and pass the dressing.
