Recipe Description
Considered a cure for everything from a cold to a bad day, this soothing soup can be made in minutes with ready made chicken stock.

Ingredients

2 Tablespoon(T)  vegetable oil
1   leek, white and light green parts only, thinly sliced
1   bay leaf
8 Ounce(oz)  firm tofu, diced
4 Ounce(oz)  tiny pasta or thin noodles
6 Cup(c)  chicken stock
1 Cup(c)  cooked chicken, diced
1 Teaspoon(t)  salt
1/4 Teaspoon(t)  black pepper, freshly ground
1/4 Cup(c)  fresh parsley, chopped

Preparation

In a large saucepan, heat oil over medium heat.  Stir fry leek until softened, about 2 minutes.  Add bay leaf, tofu, pasta, chicken stock, chicken, salt and pepper.  Increase heat to high and bring to a boil.  Reduce heat to low and simmer, uncovered, for about 20 minutes to allow flavors to blend.  Stir in parsley.

Additional notes

Variations: Use cooked turkey and turkey stock instead of chicken.  Add 1 to 2 cups calcium vegetables, such as bok choy or kale.
