Recipe Description
Remoulade is a piquant mayonnaise sauce for cold poultry, meats and shellfish. The name itself comes from the French (and earlier, Latin) name for ''horseradish.'' This one leaves out nearly all the saturated fat and cholesterol that clog most versions, yet it remains spirited and satisfying.

2 Tablespoon(T)  lemon juice
2 Tablespoon(T)  creole mustard
1 Tablespoon(T)  olive oil
1 Teaspoon(t)  paprika
1 Teaspoon(t)  white wine vinegar
1 1/2 Teaspoon(t)  prepared horseradish
1 Teaspoon(t)  worcestershire sauce
2 Cup(c)  cooked white meat chicken, shredded
3/4 Cup(c)  celery, thinly sliced
1/4 Cup(c)  green onion, minced
4   large red leaf lettuce leaves
12   cherry tomatoes


Combine lemon juice, mustard, olive oil, paprika, vinegar, horseradish and Worcestershire sauce in a medium bowl. Mix well. Add chicken, celery and green onion. Toss well. Cover and refrigerate at least 3 hours, stirring occasionally. Line salad plates with lettuce leaves. Spoon salad mixture over. Garnish each with 3 cherry tomatoes.
