Recipe Description
This is a perfect ending to a summer dinner. If possible, chill the soup overnight and serve it in chilled bowls.

Ingredients

2 Cup(c)  blueberries, fresh or frozen
1 1/2 Cup(c)  water
1/4 Cup(c)  sugar
1   cinnamon stick
1/2   lemon zest, cut in long 2 inch peels
3/4 Cup(c)  sour cream

Preparation

In a saucepan over high heat, combine all ingredients except sour cream and bring to a boil. Reduce heat to medium low and simmer uncovered, 15 minutes. Cool slightly. Remove cinnamon stick and lemon peel. Transfer to a blender or food processor and puree until smooth. Cover and refrigerate for several hours or overnight. Whisk in sour cream just before serving.

Additional notes

Variations: Substitute 1/2 teaspoon ground cinnamon for cinnamon stick. Plain yogurt can be used instead of sour cream.
