Chilled Cucumber Yogurt Soup

1 1/4 Cup(c)  authentic greek yogurt
2   medium cucumbers
1/4 Cup(c)  chicken stock
2 Tablespoon(T)  walnut oil
1 Clove(clv)  garlic, crushed
3 Tablespoon(T)  fresh dill, chopped
1 Pinch(pn)  salt, to taste
1 Cup(c)  walnut oil
1 Pinch(pn)  pepper, to taste
1/4 Cup(c)  walnuts, chopped


Peel the cucumbers and dice the flesh. Beat the yogurt with the chicken stock, the walnut oil, garlic and dill, reserving a little to garnish. Stir in the chopped cucumber and season with salt and pepper. Chill the soup in the refrigerator for at least 4 hours. Stir in the chopped walnuts and serve garnished with the reserved chopped dill.
