Recipe Description
This cooling soup is like an aspic in liquid form. Serve it on a hot summer day in chilled mugs for an introduction to a barbecue.

Ingredients

1/4 Teaspoon(t)  tabasco sauce
1 Tablespoon(T)  creamy prepared horseradish
1 Tablespoon(T)  dijon mustard
1/4 Teaspoon(t)  white pepper, ground
1/4 Teaspoon(t)  salt
1   avocado, peeled, pitted and chopped
6   green onions, including some tender green tops, finely sliced
1   cucumber, peeled, seeded, chopped and drained
1   large tomato, peeled, seeded and chopped
1 Cup(c)  chicken stock or broth
5 Cup(c)  tomato juice

Preparation

In a large bowl, combine all ingredients and whisk until smooth. Cover and refrigerate several hours or overnight. Serve in chilled bowls with a dollop of creme fraiche.
