Chocolate Peppermint Pudding

Recipe Description
This smooth, rich pudding is made entirely dairy free. The flavorings can be altered in a number of ways to suit any palate or occasion.

Ingredients

1/2 Cup(c)  sucanat
2 Tablespoon(T)  cornstarch
2 Tablespoon(T)  unsweetened cocoa powder
1/4 Teaspoon(t)  fine sea salt
2 Cup(c)  chocolate or vanilla soy, or other non dairy milk
3 Ounce(oz)  non dairy bittersweet chocolate, chopped
2 Tablespoon(T)  non dairy butter
1/4 Teaspoon(t)  pure peppermint extract (optional)

Preparation

In a medium sized saucepan, combine the Sucanat, cornstarch, cocoa, and salt. Slowly whisk in the milk. Cook over medium high heat until it starts to thicken, whisking constantly. Whisk in the chocolate and butter. Cook until melted and thickened. Stir in the extract, if using. Divide among 4 small sized dessert dishes. Let cool completely before chilling in the fridge for 2 hours or overnight. Serve cold.

Additional notes

Variations: If you only like your mint in toothpaste form, replace it with 1 teaspoon pure vanilla extract instead.
