Recipe Description
Store fresh ginger in vodka in a jar in your refrigerator, and it will last until yov have used it all.  Fresh ginger also can be frozen.  It adds a wonderful, fresh tang to many foods.

Ingredients

1/2 Teaspoon(t)  coriander, ground
1 Teaspoon(t)  sugar
1 Teaspoon(t)  salt
2 Tablespoon(T)  fresh cilantro, finely chopped
2 Tablespoon(T)  olive oil
2 Tablespoon(T)  fresh lime juice
2 Teaspoon(t)  fresh ginger, finely minced
1/2 Cup(c)  red onion, diced
1 Cup(c)  plum tomatoes, seeded and diced
2 Cup(c)  fresh oranges, diced, peeled, seeded and membrane removed

Preparation

Combine all ingredients.  Cover and chill.
