Serve this versatile shrimp as an appetizer, on salad greens as an entree, or hot and smoky with crusty bread.

Ingredients

1 Cup(c)  hickory wood chips
1/2 Cup(c)  orange juice
1 Tablespoon(T)  lime peel, grated
1/4 Cup(c)  lime juice
1 Tablespoon(T)  vegetable oil
1 Tablespoon(T)  honey
2 Pound(lb)  large shrimp in shells, fresh or frozen (thaw if frozen)

Preparation

Cover wood chips with water and soak for 30 minutes.  Mix ingredients, except shrimp, in shallow non-metal bowl or resealable plastic bag.  Add shrimp, stirring to coat with marinade.  Cover and refrigerate 30 minutes.  Drain wood chips.  Prepare and heat smoker using wood chips.  (For charcoal smoker, use 2 pounds charcoal briquettes.)  Remove shrimp from marinade.  Pour marinade into water pan in smoker.  Add water to "fill" line in pan.  Cover and smoke shrimp about 45 minutes, or until pink and firm.
