Recipe Description
Here, chunks of fish are cooked in a creamy sauce, under a layer of golden cheese and mashed potatoes. Using mascarpone cheese is a quick way to make cheese sauce and is an excellent source of calcium.

1 1/2 Pound(lb)  cod fillets
2 1/2 Cup(c)  whole milk
1/2   onion. sliced
1   carrot. thinly sliced
1   bay leaf
2 Pound(lb)  potatoes. peeled and cut into even sized pieces
6 Tablespoon(T)  butter
2/3 Cup(c)  light cream
1   salt and pepper to taste
1 Cup(c)  aged cheddar cheese, grated
1/2 Pound(lb)  small broccoli florets
1   large leek. thinly sliced
1 1/4 Pound(lb)  mascarpone cheese
1 Tablespoon(T)  fresh dill


Preheat the oven to 350°F (180"C). Place cod in an oven proof dish and cover with 2 cups of milk. Add onion, carrot, and bay leaf. Cover and cook in the oven for 20 minutes. Strain off, and discard, the milk. Meanwhile, cook potatoes in boiling water for 20 minutes. Drain and return to the saucepan. Add 2 tablespoons of butter and mash smoothly. Add cream and the remaining milk and beat until light and fluffy. Season well, then fold in half the Cheddar cheese. Blanch broccoli in boiling salted water for 1 minute. Drain well and rinse under cold running water. Set aside on a plate lined with paper towels. Melt 2 tablespoons of butter in a saucepan and cook the leeks for 5-7 minutes, until softened. Add mascarpone cheese and stir well until smooth. Cook for 5-7 minutes until thickened. Chop dill, reserving several sprigs to garnish. Stir dill into the mascarpone and season well. Turn the oven up to 450°F (230°C). Flake cod in the oven proof dish. Place the broccoli evenly over the flaked fish, then pour on the sauce. Add the mashed potato, covering the filling completely, and sprinkle with remaining cheddar cheese. Dot with remaining butter and bake in the oven for 10-15 minutes until brown on top. Serve garnished with sprigs of fresh dill.
