1/4 Ounce(oz)  unsweetened lemonade drink mix powder
1 Cup(c)  powdered sugar
1 Teaspoon(t)  baking soda
1 1/2 Teaspoon(t)  baking powder
2 1/2 Cup(c)  all purpose flour
1/4 Teaspoon(t)  salt
1 Teaspoon(t)  pure lemon extract
1 Teaspoon(t)  pure vanilla extract
3/4 Cup(c)  non dairy yogurt
1/3 Cup(c)  vegetable shortening
1/2 Cup(c)  granulated sugar
1 Cup(c)  powdered sugar


To make the cookies: Preheat the oven to 325°F. Line 2 baking sheets with parchment paper or silicone baking mats. In a large sized bowl and using an electric mixer, beat together the powdered sugar, granulated sugar, shortening, yogurt, vanilla, lemon extract and salt, until creamy. Slowly beat in the flour, baking powder and baking soda. Beat until smooth. Spoon drop 15 cookies, using about 1 ounce per cookie, evenly spaced, onto each of the prepared baking sheets. Bake for 18 to 20 minutes, or until lightly browned. To make the coating: While the cookies are baking, place the powdered sugar and drink mix into a resealable plastic bag and shake to combine. Remove the cookies from the oven and let cool for about 5 minutes. Add the cookies, 4 or 5 at a time, to the bag and shake to coat.
