Here's a shocker! You can actually make risotto with regular long grain rice. You don't need to buy that expensive Arborio rice. The taste is equally delicious, and your wallet will thank you.

1 Tablespoon(T)  olive oil
1 Tablespoon(T)  butter
1   onion, finely chopped
3 Clove(clv)  garlic, minced
2 Cup(c)  long grain brown rice
3 Cup(c)  chicken stock
1/2 Teaspoon(t)  salt
1/8 Teaspoon(t)  pepper
1 Cup(c)  frozen spinach, thawed and chopped
12 Ounce(oz)  flaked surimi
1/2 Cup(c)  parmesan cheese, grated
1/2 Cup(c)  muenster cheese, grated


In large saucepan, combine olive oil and 1 tablespoon butter. Cook onion and garlic until crisp tender, about 4 minutes. Stir in rice. Cook and stir for 2 minutes longer. Place rice mixture in 3 quart slow cooker. Add chicken stock, salt and pepper. Cover and cook on low for 6 to 7 hours, or until rice is almost tender. Stir in spinach and surimi. Cover and cook on high for 20 to 30 minutes, or until hot. Add cheeses, cover, and turn off heat. Let stand for 10 minutes, then stir and serve.

Additional notes

Surimi: Surimi, also known as artificial crab, is made of real seafood. White fish is flavored and colored and shaped to resemble crab legs. It does taste remarkably like the real thing, flakes into small pieces, and is much less expensive than lump crab. Add it at the very end of any recipe so it doesn't overcook.
