Recipe Description
Wild crab apple trees blossom and fruit all through the Irish countryside, year in and year out. I came across many recipes for crab apple jelly and even wine, but this recipe was the only one for a cake.

Ingredients

3 Cup(c)  sour milk
2   duck eggs
12   crab apples
16 Tablespoon(T)  butter
1 Teaspoon(t)  baking soda
1 1/4 Cup(c)  sugar
4 3/4 Cup(c)  flour

Preparation

Mix the flour, sugar and baking soda together in a bowl and rub in the butter. Peel, core and cut the crab apples in halves and put into the mixture. Beat the eggs well with a fork and add to the sour milk, then to the flour. Knead the mixture into a round cake and bake in a pot oven over a slow fire for one hour.
