This chutney is a delicious and colorful complement to turkey, chicken or pork.

2 Cup(c)  dried cranberries
1 1/4 Cup(c)  sugar
3/4 Cup(c)  distilled white vinegar
1/4 Cup(c)  celery, chopped
1/4 Cup(c)  fresh ginger, minced
6 Tablespoon(T)  unsweetened apple juice
3 Tablespoon(T)  lemon juice
1/2 Teaspoon(t)  red pepper flakes, crushed


Combine berries, sugar, vinegar, celery, ginger, juices and red pepper in a large saucepan over medium heat.  Cook 8 to 10 minutes after sugar dissolves, stirring frequently.  Allow to cool to room temperature, cover, and refrigerate.
