1/4 Cup(c)  walnuts, chopped
1 Teaspoon(t)  vanilla extract
1 Tablespoon(T)  sugar
1/2 Teaspoon(t)  baking soda
2 Teaspoon(t)  low sodium baking powder
1 Cup(c)  all purpose flour
1 Teaspoon(t)  orange peel, grated
1 Tablespoon(T)  canola oil
1/2 Cup(c)  unsweetened orange juice
1/4 Cup(c)  egg substitute
1/2 Cup(c)  cranberries, fresh or frozen

Preparation

Preheat the oven to 350° F. Combine all of the ingredients in a bowl, stirring until just blended. Pour into prepared muffin tins, and bake for 20 minutes.
