These citrus and berry biscuits are a favorite of our family's on Christmas morning. They go together quickly, so everyone can enjoy the holiday without devoting hours in the kitchen.

Ingredients

2 Cup(c)  all purpose flour
1 Teaspoon(t)  low sodium baking powder
1/8 Teaspoon(t)  salt
3 Tablespoon(T)  sugar
2/3 Cup(c)  low fat buttermilk, lukewarm
2 Tablespoon(T)  water, lukewarm
1 Package(pk)  dry yeast
1/2 Cup(c)  cranberries, dried and crushed
1/4 Cup(c)  pure fruit orange marmalade

Preparation

Mix the all purpose flour, baking powder, salt and sugar in a bowl. Cut the vegetable shortening into the flour mixture until it looks grainy. In a separate cup combine the buttermilk and water and dissolve the yeast in the liquid. Add slowly to the flour mixture to form a dough. On a floured surface knead the cranberries and orange marmalade into the dough. It will be sticky at first, but it will improve as it mixes. Roll the dough to 1/2 inch thickness and cut biscuits. Place on a baking sheet coated with non stick cooking spray and allow to rise for approximately 20 minutes. Preheat oven to 425° F. Bake for 8 minutes, or until golden brown.
