Ingredients

2 Cup(c)  cooked rice
2/3 Cup(c)  sour cream
1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  cold water
1 Tablespoon(T)  instant flour
3 Tablespoon(T)  butter
6 Cup(c)  beef broth
3 Tablespoon(T)  dill weed
16   crayfish or 3 lobsters

Preparation

Place the crayfish or lobsters in a kettle in boiling water with 2 tablespoons dill added. Strain, cool. Take out the meat from the tails and pincers. Place in a bowl, add just enough broth to cover. Grind all red parts of the shells. Add to butter boiling with 1 cup broth. Simmer till a red "crayfish butter" forms on top. Add it, together with the broth from the shells, but without the ground shells, to the bowl. Heat the rest of the beef broth, add the contents of the bowl. Add the flour mixed with 2 tablespoons cold water. Bring to boil. Remove from heat. Season with salt. Add sour cream, hot rice, and 1 tablespoon dill.
