Ingredients

1/2 Cup(c)  fresh dill, chopped
1/4 Cup(c)  tarragon vinegar
1/2 Cup(c)  light cream
3 Tablespoon(T)  olive oil
1/2 Teaspoon(t)  black pepper, freshly ground
1 Tablespoon(T)  sugar
2 Teaspoon(t)  salt
4   medium cucumber, peeled and thinly sliced

Preparation

Place cucumber slices in a medium bowl. Add salt. Mix lightly until salt adheres evenly to cucumber slices. Cover and refrigerate 1 hour. Drain juice from cucumber slices. Sprinkle sugar, pepper and olive oil over cucumber slices. In a small bowl, combine light cream, vinegar and chopped dill. Add to cucumber slices and gently mix. Cover and refrigerate until ready to serve.
