Ingredients

1/2   large cucumber
1/4   radishes
4   large red onion, thinly sliced
1/4 Ounce(oz)  jarlsberg lite or reduced fat swiss cheese, grated
1 Cup(c)  fresh parsley, minced
1 Tablespoon(T)  red wine vinegar
1/3 Tablespoon(T)  dijon or spicy brown mustard
1 Cup(c)  plain non fat yogurt
1 Tablespoon(T)  light mayonnaise
2 Teaspoon(t)  basil, dried
1/8 Teaspoon(t)  celery seed

Preparation

Scrub cucumber clean, removing waxy substance if necessary. It is preferable not to peel it. Slice the cucumber as thinly as possible. Clean, trim, and slice the radishes as thinly as possible. Combine the cucumbers, radishes and onion in a bowl, along with the cheese. Add the remaining ingredients, tossing lightly. Serve chilled
