Recipe Description
Dad made this famous after every St Patrick's Day. He would make his famous corned beef hash. We always topped each serving of this hearty dish with a fried egg, if you'd like for the classic finish.

Ingredients

6   russet potatoes
1 Tablespoon(T)  olive oil
2 Tablespoon(T)  butter
1   onion, chopped
3 Clove(clv)  garlic, minced
12 Ounce(oz)  corned beef, diced
1/2 Cup(c)  beef stock
1   tomato, chopped
1/4 Cup(c)  parmesan cheese, grated

Preparation

Scrub potatoes but do not peel. Cut potatoes into 1/2 inch pieces. In large skillet. combine olive oil and butter over medium heat. Add onion, garlic and potatoes. Cook and stir for 8 to 10 minutes, or until potatoes are beginning to brown. Add corned beef and beef stock and bring to a simmer. Cover and simmer for 10 to 15 minutes, or until potatoes are tender. Uncover and add tomato. Simmer for 3 to 4 minutes longer. Stir, sprinkle with cheese, and serve.
