Dandelion Salad, Wissahickon

Bacon is the key ingredient in this lovely wilted green salad made from young dandelions.

Ingredients

1/2 Teaspoon(t)  pepper
1/2 Teaspoon(t)  paprika
2 Tablespoon(T)  butter
1 Teaspoon(t)  salt
1 Tablespoon(T)  sugar
1 Pound(lb)  young dandelions
4 Tablespoon(T)  vinegar
1/2 Cup(c)  cream
5 Slice(sli)  bacon
2   eggs

Preparation

Wash and dry dandelions (preferably picked from stalks which have no flowers). Place in salad bowl and let stand in warm place. Dice and fry the bacon, and then drop the bacon pieces and the fat on top of the dandelions. Mix the butter and cream and melt slowly. Beat the eggs, add pepper and salt, vinegar and sugar and mix with the warm cream mixture. Pour into the fry pan and stir until it thickens like a custard. Pour this smoking hot over the dandelions and stir well.
