1 1/3 Cup(c)  buttermilk
3/4 Cup(c)  bran buds or all bran cereal
3/4 Cup(c)  all purpose flour
1 Cup(c)  cornmeal
1 Tablespoon(T)  baking powder
1 Teaspoon(t)  baking soda
1 Tablespoon(T)  salt
2   egg whites
1/4 Cup(c)  vegetable oil
1/4 Cup(c)  molasses
1 Cup(c)  dates, chopped


Preheat the oven to 425° F. Grease twelve 2 1/2 inch muffin cups. In a medium bowl, combine the buttermilk and Bran Buds and let stand 5 minutes. In a large bowl, stir together the flour, cornmeal, baking powder, baking soda and salt. Add the egg whites, oil, molasses and dates to the bran mixture and stir until completely combined. Using a wooden spoon, stir liquid into dry ingredients until just moistened. (Be careful not to over beat or the muffins will have tunnels.) Divide the batter evenly among the prepared muffin cups (they will be fairly full). Bake 12 to 15 minutes, or until lightly browned on top.
