Recipe Description
I was once asked to bring samples to feed a hundred people for a "Taste of Passover" event at a local synagogue. I was the only presenter who was not a caterer. I have to say I drew the largest crowd. People were milling around sipping leftover dressing from plastic spoons!

1 Dash(ds)  kosher (coarse) salt, or to taste
1 Cup(c)  vegetable oil
3/4 Cup(c)  sugar
1/3 Cup(c)  red wine vinegar
1 Tablespoon(T)  prepared mustard
1 Tablespoon(T)  onion, grated
1 1/2 Tablespoon(T)  poppy seeds
8 Ounce(oz)  button mushrooms
2   granny smith apples
1 Cup(c)  cashews (salted or unsalted)
1   large head romaine lettuce, rinsed, dried and torn
8 Ounce(oz)  swiss cheese, cut into 1/2 inch cubes


Combine all the dressing ingredients in a blender and process until well mixed. (The dressing can be made ahead and refrigerated, covered. Allow it to come to room temperature before tossing with the salad.) Slice mushrooms and apples, then combine all the salad ingredients in a large bowl. Immediately before serving, toss the salad with enough of the dressing to lightly coat. Serve any extra dressing in a boat or bowl on the side.
