This is a simple pork roast recipe that adds the spiciness of Dijon mustard and sweet, fresh vegetables.

12 Teaspoon(t)  dijon mustard
1   stalk celery, sliced
1   medium zucchini, sliced into 1/4 inch rounds
1   medium carrot, sliced into 1/4 inch rounds
1/2 Cup(c)  leeks, chopped
1 Teaspoon(t)  thyme
1/2 Teaspoon(t)  dry mustard
1/2 Teaspoon(t)  garlic powder
2 Cup(c)  low sodium stock
3 Pound(lb)  lean pork roast, with bone


Trim all visible fat from the roast, and place the roast in a baking pan. Pour the stock over it. Combine the garlic powder, dry mustard, and thyme, and rub the mixture over all sides of the roast. Arrange the chopped vegetables around the roast. Bake at 350 degrees F, for 1 1/2 hours, or until the roast is cooked through and tender (170°F), basting occasionally. Serve each slice of pork with a teaspoon or two of Dijon mustard and vegetables.
