Recipe Description
Fresh dill brightens the taste of this English yeast bread. Cottage cheese makes the loaf moist and tender to the bite.

Ingredients

4 Teaspoon(t)  salt
5 Ounce(oz)  cottage cheese
2   eggs, lightly beaten
1 Bunch(bn)  dill, finely chopped
4 Tablespoon(T)  oil
1/2   onion, chopped
5 Ounce(oz)  strong flour
2 Tablespoon(T)  sugar
16 Ounce(oz)  lukewarm water
4 Teaspoon(t)  active dried yeast
1/4 Cup(c)  milk, for glazing

Preparation

Mix together the yeast, water and sugar in a large bowl and leave for 15 minutes to dissolve. Stir in about half of the flour. Cover and leave to rise in a warm place for 45 minutes. In a frying pan, cook the onion in 1 tablespoon of the oil until soft. Set aside to cool, then stir into the yeast mixture. Stir the dill, eggs, cottage cheese, salt and remaining oil into the yeast. Gradually add the remaining flour until the mixture is too stiff to stir. Transfer to a floured surface and knead until smooth and elastic. Place in a bowl, cover and leave to rise until doubled in volume, 1 to 1 1/2 hours. Grease a large baking sheet. Cut the dough in half and shape into 2 rounds. Leave to rise in a warm place for 30 minutes. Preheat a 375 degree F oven. Score the tops, brush with the milk and bake until browned, for about 50 minutes. Cool on a rack.
