Recipe Description
One way to achieve a full flavored potato salad is to pour a vinaigrette over the potatoes while they are still hot. This allows the potatoes to soak up the flavors of the dressing.

Ingredients

1/4 Teaspoon(t)  pepper, freshly ground
1/2 Teaspoon(t)  kosher salt
1/8 Teaspoon(t)  paprika
1/2 Teaspoon(t)  sugar
1/4 Teaspoon(t)  dry mustard
2 Tablespoon(T)  vegetable oil
1/4 Cup(c)  apple cider vinegar
1 Tablespoon(T)  fresh dill, minced
1 Tablespoon(T)  fresh parsley, chopped
1   large dill pickle, chopped
2   ribs celery, chopped
1/2 Cup(c)  red onions, cut in 1/2 inch pieces
6   medium potatoes, cut into cubes

Preparation

Cook the potatoes until fork tender. Meanwhile, combine the onions, celery, pickle, parsley and dill in a large bowl. Whisk together the remaining ingredients. When the potatoes are cooked, drain them and place them in the bowl with the other vegetables. Pour the dressing over all and toss well. Serve this salad immediately while still hot, or later at room temperature.
