Recipe Description
This is a great recipe to try when you have leftover chicken on hand. The cooking and preparation time is significantly reduced, saving you time and effort. If you happen to have chicken stock on hand, be sure to use it. The flavor carries much greater impact than simply using canned broth.

2 Tablespoon(T)  vegetable or peanut oil
1   medium sized yellow onion, finely chopped
2 Cup(c)  leftover cooked chicken, diced
2 Clove(clv)  garlic, minced
2 Can(cn)  chinese vegetables, drained and rinsed
1 Cup(c)  basic chicken stock, or canned low sodium chicken broth
2 Tablespoon(T)  reduced sodium soy sauce
2 Teaspoon(t)  oriental sesame oil
2 Teaspoon(t)  cornstarch
16 Ounce(oz)  chow mein noodles

Preparation

Heat the vegetable oil in a wok or deep 12 inch skillet over moderately high heat for 1 minute. Add the onion and saute, stirring, for 1 minute. Add the chicken and garlic and saute, stirring, for 2 minutes. Add the vegetables and cook, stirring, 3 minutes more or until the vegetables are heated through. Meanwhile, combine the stock, soy sauce, sesame oil, and cornstarch in a small bowl, then stir into the chicken mixture. Cook, stirring constantly, for 2 to 3 minutes or until the sauce is slightly thickened. Arrange the chow mein noodles on 4 dinner plates and ladle the skillet mixture on top.
