Recipe Description
Here's a basic bean recipe that you can use with virtually any dried bean. Serve over grain to provide complementary protein for your main course, or as a side dish. Add the optional crushed red pepper, if you like spicy food

2 Cup(c)  beans, dried
1   water
1/2 Clove(clv)  garlic, minced
1 Teaspoon(t)  salt
1 Tablespoon(T)  olive oil
2   medium onions, cut in chunks
1 Teaspoon(t)  crushed red pepper (optional)


Rinse the beans thoroughly in water to remove dirt. Pick over to remove any small stones that may have gotten mixed in with the beans. Soak the beans overnight in a large kettle, in 5 cups of water. (Before cooking the beans, some people change the water. We soak the beans in stock, so don't discard the liquid.) The next day, bring the beans to a boil. Turn to simmer, and add the remaining ingredients. Let simmer about 4 hours, until most or all of the water is gone, stirring occasionally.
