Recipe Description
This bread is also known as Ymarina Yewotet Dabo. You won't find many variations of it if you search elsewhere. Its five primary flavors are honey, cinnamon, cloves, coriander, and salt. This recipe was developed from an original Ethiopian eecipe tucked away in my files many years ago. It's a marvelous treat and one you'll probably make again.

1   large egg
1/2 Cup(c)  honey
1 Tablespoon(T)  cider vinegar
3 Tablespoon(T)  extra virgin olive oil
2 Tablespoon(T)  unbleached bread flour
1/4 Teaspoon(t)  ascorbic acid
1 Teaspoon(t)  onion powder
2 Tablespoon(T)  potato flour
1 Tablespoon(T)  granular lecithin
1 Tablespoon(T)  vital wheat gluten
1 Teaspoon(t)  sugar
1 Tablespoon(T)  coriander, ground
3/4 Teaspoon(t)  cinnamon, ground
1/4 Teaspoon(t)  cloves, ground
2 3/4 Teaspoon(t)  bread machine yeast
2 Tablespoon(T)  unbleached bread flour
1 Cup(c)  warmed non fat milk, 100° to 110° f


Place the ingredients in the order listed into your bread pan. Set the bread machine for white bread, 2 1/2 pound loaf, light crust, or 2 pound loaf, medium crust. When the bread is done, roll out onto rack and let cool. Serve hot straight out of the bread machine, or at room temperature.
