Recipe Description
To my mind, all butter pastry makes the best tasting crust, and all shortening pastry makes the flakiest. I use a combination of both to get a flaky and tasty crust.

Serves Tool

Serves To:USMetric
1 1/4 Cup(c)  all purpose flour
3/4 Cup(c)  whole wheat flour
1 Teaspoon(t)  salt, or to taste
1/2 Cup(c)  cold butter
1/4 Cup(c)  shortening
5 Tablespoon(T)  ice water


In a large bowl, stir together both flours and the salt. Using a pastry cutter or two knives, cut in the butter and shortening until the mixture resembles coarse cornmeal. Pour 1 tablespoon of the water over one section of the flour. Using a fork, work the dough until combined, then continue with remaining water. Form into a ball. Divide the dough in half and roll out as directed in specific recipes.
