SWEDISH PANCAKES CAN BE SERVED FOR BREAKFAST OR DESSERT, BUT SWEDES PREPARE THEM FOR SUPPER. FRUIT IS ALWAYS A WELCOME ACCOMPANYMENT

Ingredients

3   eggs
1 1/2 Cup(c)  sifted all-purpose flour
1 Tablespoon(T)  granulated sugar
1/2 Teaspoon(t)  salt
1 Cup(c)  milk, plus extra as needed
1/2 Cup(c)  cream or milk
2 Tablespoon(T)  butter, melted
2 Cup(c)  lingonberry sauce
   confectioners' sugar, for garnish

Preparation

Beat the eggs very well.

Sift together the flour, sugar, and salt.

Add 1/2 cup of the milk to the eggs and fold in the flour mixture.

Then add the remaining 1/2 cup milk, the cream, and butter. Add more milk if the consistency is too thick.

Ladle the batter onto the surface of a hot griddle or crepe pan, creating 5-inch-diameter circles. These pancakes should be thin and will need only 1 or 2 minutes on each side to brown.

Place 2 tablespoons of bananas, berries, lingonberry (Swedish cranberry) sauce or your favorite fruit in the center of each pancake and roll the pancake up like a jelly roll.

Serve sprinkled with confectioners' sugar.

Additional notes

You can substitute any fruit jam for the lingonberry sauce.
