Recipe Description
Peas fresh from the garden have amazing flavor! Store purchased varieties lack brightness, and canned versions don't even come close. If you don't have a garden, consider purchasing fresh peas from your local farmers market.

1 Pound(lb)  garden peas
1/2 Cup(c)  water
1 Teaspoon(t)  salt
1 Teaspoon(t)  sugar
2 Tablespoon(T)  butter
2 Teaspoon(t)  fresh mint, chopped
1   fresh mint sprig


Bring the water to a boil. Add the salt, sugar, mint sprig and the peas. Bring the water back to a boil and simmer until the peas are cooked, for approximately 4 to 5 minutes. Strain the peas, reserving the water for soup or gravy. Add the butter. Garnish with a little chopped fresh mint and add a little extra seasoning if necessary. Eat immediately.
