Recipe Description
Zucchini is one of the best vegetables for grilling. When combined with onion, mild chiles and ginger, the resulting relish is packed with flavor.

Ingredients

1/2 Teaspoon(t)  salt
1 Teaspoon(t)  ginger root, finely chopped
3 Tablespoon(T)  maple flavored syrup
3 Tablespoon(T)  lemon juice
1/4 Cup(c)  anaheim chile, finely chopped
1 Tablespoon(T)  vegetable oil
1   large onion
2   medium zucchini

Preparation

Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Cut zucchini lengthwise into 1/2 inch slices. Cut onion crosswise into 1/2 inch slices. Brush zucchini and onion with oil. Grill for about 5 minutes, until vegetables are tender. Mix remaining ingredients in a small bowl. Add zucchini and onion.
