Quick breads are easy and delicious gluten free breads, as they are moist and have flavorful ingredients that mask the strong flavors of gluten free flours. This bread is no exception. Strong lemon flavor and delicate poppy seeds make this an easy gluten free treat you’ll go back to again and again.

1 1/2 Cup(c)  gluten free flour blend
2   large eggs
1/4 Cup(c)  butter, melted
1/2 Cup(c)  milk
1 Cup(c)  sugar
1/4 Cup(c)  poppy seeds
2 Tablespoon(T)  lemon zest
1 Teaspoon(t)  salt
1/2 Teaspoon(t)  xanthan gum
1 Teaspoon(t)  baking powder


In a large bowl beat the eggs and sugar. Add lemon zest, butter and milk. In a medium bowl, whisk together dry ingredients, including poppy seeds. Combine all ingredients in large bowl and combine completely. Pour batter into greased loaf pan, bake at 350º until toothpick inserted in center comes out clean. Cool, slice and serve.
