A simple gnocchi slow cooker recipe, with a creamy mushroom sauce. This is perfect for serving during the cold weather months, when you want something hearty to eat, and have the kitchen smelling wonderful!

Ingredients

1 Tablespoon(T)  fresh parsley, chopped (optional)
1 Tablespoon(T)  parmesan cheese, shredded
2 Teaspoon(t)  italian seasoning, dried
1/2 Cup(c)  madeira wine
1 Cup(c)  frozen onion, chopped
8 Ounce(oz)  fresh baby bella mushrooms, sliced
22 Ounce(oz)  condensed cream of mushroom soup with roasted garlic
16 Ounce(oz)  potato gnocchi

Preparation

In a large pot of salted, boiling water, cook gnocchi for 3 to 4 minutes. As gnocchi float to top, remove with slotted spoon. Transfer to a 4 quart slow cooker. Stir soup, mushrooms, onion, wine and Italian seasoning into slow cooker until thoroughly combined. Cover and cook on low heat setting for 2 to 3 hours, or until heated through. Serve with Parmesan cheese and chopped parsley, if desired.
