Recipe Description
When I spotted this in a specialty food store, I had to buy it. Caramel popcorn is delicious, but this is better. The buttery toffee flavor and the crunchy almonds taste wonderful together. If you have never made this style of popcorn, you should give it a try-you don't know you're missing!

Ingredients

3 Quart(q)  (12 cups) popped popcorn, plain
1/2 Cup(c)  brown sugar
1/2 Cup(c)  sugar
1/2 Cup(c)  butter
1/2 Teaspoon(t)  salt
1/2 Cup(c)  light corn syrup
1/4 Teaspoon(t)  baking soda
1 1/2 Tablespoon(T)  butter flavoring
1   5-oz bag sliced almonds

Preparation

Place the popped popcorn in a large roasting pan that has been sprayed with a nonstick spray and set aside.

In a saucepan on low heat, mix the brown sugar, sugar, butter, salt, and corn syrup. Let the mixture come to a soft boil and then place a lid on the pan for 30 seconds.

Remove the lid and stir with a clean spoon so that all the sugar and salt crystals are dissolved and none get back in the mixture. Turn the heat down and let the mixture boil gently without a lid for 5 minutes, stirring constantly.

Preheat the oven to 225 F. When 5 minutes are up, remove the pan from the heat and mix in the baking soda. The syrup will foam but this is normal. Stir until the baking soda is completely dissolved.

Add the butter flavoring and stir some more. Pour the syrup over the popcorn, slowly stirring the popcorn constantly to gently coat it. When the popcorn is coated, pour the almonds in and stir well.

Bake the popcorn for 1 hour. Stir and mix the popcorn every 15 minutes. When the popcorn is finished baking, pour it onto a nonstick surface to cool. Plastic wrap works well for this and is easy to clean up.
