Cut flour, 1/2 cup sugar, salt and butter together with two knives or a pastry cutter. Reserve 3/4 cup crumb mixture for topping. Press remaining crumb mixture on bottom and sides of 8 or 9 inch square pan. Mix apples, 1/2 cup sugar, tapioca and cinnamon, and spread over crust. Bake at 425 degrees F for 20 minutes. Sprinkle reserved crumbs on top and bake 20 minutes more. Serve warm or cold, with whipped cream or ice cream.
