3/4 Cup(c)  sour skim milk
1 Tablespoon(T)  orange peel, grated
1/2 Cup(c)  orange juice
4   egg whites, slightly beaten
2 Cup(c)  sugar
3/4 Cup(c)  margarine, at room temperature
2 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
4 1/2 Cup(c)  all purpose flour


Preheat the oven to 350°F. Lightly spray a cookie sheet with vegetable spray. In a medium bowl mix the flour, baking soda, and baking powder. In a large mixing bowl, beat the margarine and sugar until light and fluffy. Add the egg whites, juice, and orange peel. Gradually add the flour mixture, alternating with the sour milk. Mix thoroughly. Drop by teaspoonfuls onto the prepared cookie sheet. Bake for 8 minutes or until set. Cool on wire racks. Ice if desired.
