Ingredients

2 Teaspoon(t)  vegetable oil
1/2 Cup(c)  onions, chopped
2 Tablespoon(T)  white wine
1 Teaspoon(t)  balsamic vinegar
3   plum tomatoes, seeded and chopped
1/4 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground
2 Tablespoon(T)  fresh parsley, minced
1/4 Teaspoon(t)  oregano, dried
1/2 Pound(lb)  fresh green beans, trimmed and steamed

Preparation

Heat the oil in a medium saute pan. Add the onions and saute until softened. Add the wine and vinegar and continue to cook over low heat, stirring frequently, until the onions begin to turn light golden and start to caramelize (this long cooking brings out the sweetness of the onions and thickens the vinegar). Add the tomatoes and seasonings. Cook, covered, until the tomatoes are warmed through. If more liquid is needed, add another tablespoon or so of wine. Toss in the beans and heat through.
