You can turn pasta into any ethnic cuisine just with the ingredients you choose. This Greek pasta is flavorful and delicious, thanks to the addition of creamy feta cheese.

1 Tablespoon(T)  olive oil
2 Tablespoon(T)  butter
2   onions, chopped
3 Clove(clv)  garlic, minced
10 Ounce(oz)  frozen spinach, thawed and chopped
14 Ounce(oz)  tomatoes, diced and undrained
1/2 Teaspoon(t)  salt
1/8 Teaspoon(t)  pepper
12 Ounce(oz)  linguine
1/3 Cup(c)  feta cheese, crumbled


Bring a large pot of salted water to a boil. Meanwhile, in large saucepan combine olive oil and butter over medium heat. When butter melts, add onion and garlic. Cook and stir until crisp tender, about 4 minutes. Add spinach to pan. Cook and stir until water evaporates. Add undrained tomatoes, salt and pepper, and bring to a simmer. Reduce heat and cover. Cook pasta until al dente according to package directions. Drain pasta, reserving 1/4 cup cooking water. Add pasta to saucepan and toss gently, adding some of the reserved cooking water if necessary. Sprinkle with feta and serve immediately.

Additional notes

Tip: It's important to not overcook pasta or it will become gummy. Start testing the pasta a couple of minutes before the package says it is done to be sure it's perfect.
