Green Bean Almondine (with A Twist)

Recipe Description
Traditional green bean almondines simply call for green beans sauteed in butter and tossed with blanched almonds. Boring! We added mushrooms, onions, garlic and, as an option, imitation bacon bits.

Ingredients

1 Pound(lb)  fresh green beans
3 Cup(c)  water
2 Tablespoon(T)  non dairy butter
8 Ounce(oz)  mushrooms, sliced
1 Cup(c)  yellow onion, diced
2 Tablespoon(T)  garlic, minced
1/4 Cup(c)  almonds, slivered or sliced
1/4 Cup(c)  imitation bacon bits (optional)
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, to taste

Preparation

Trim the ends off the green beans. In your largest frying pan, add the water and bring to a boil (you can add a pinch of salt to the water, if you choose). Add the beans and boil for 3 minutes. Remove from the heat. Drain, and set aside. Reheat the pan and add the butter. Heat over high heat. When the butter has melted, add the mushrooms, onion and garlic. Saute until the mushrooms have reduced in size by half, about 7 minutes. Add the almonds and bacon bits. if using. Cook for 2 more minutes. Add the green beans. Toss to coat, and cook 3 to 5 more minutes. Season with salt and pepper.
