2 Pound(lb)  top round steak
2   cloves garlic
1/2 Teaspoon(t)  sea salt
1/2 Teaspoon(t)  ground cumin
1/2 Teaspoon(t)  crushed dried oregano, preferably mexican
1/2 Cup(c)  red wine
3 Tablespoon(T)  safflower or canola oil
2   limes juice
1/2 Teaspoon(t)  freshly ground black pepper
12   flour tortillas. warmed
2 Cup(c)  salsa of choice
2 Cup(c)  guacamole
1   white onion, finely chopped (optional)
1 Cup(c)  chopped radishes (optional)
2   limes, quartered


Trim the fat from the meat, then pound it slightly to tenderize it.

Chop the garlic and mash with the salt.

Combine the garlic paste, cumin, oregano, wine, oil, lemon or lime juice, pepper, and sugar in a glass or stainless-steel bowl.

Add the meat to the marinade, turning several times so it is thoroughly coated. Cover and refrigerate, turning occasionally, for about 6 hours.

When almost ready to cook, remove the meat from the marinade and set both aside. Bring the meat to room temperature if possible.

Light a charcoal fire and let it burn until the coals are evenly white and quite hot.

Grill the meat until cooked as you like it (al gusto), usually 2-3 minutes per side, depending on the thickness of the meat and the heat of the fire. Set the steak on a cutting board, brush on the remaining marinade, and let the meat stand, covered with aluminum foil, a minute or so to reabsorb the juices.

When ready to serve, cut the meat across the grain at a slight angle into thin slices and heap on a heated platter with a pile of hot tortillas close by.

Have everyone fix their own tacos. Pile some of the meat on a tortilla, add salsa and other condiments, wrap it up, and start eating.
