You, too, can make fancy salads at home. This specially marinated grilled chicken salad makes a fantastic light meal.

1/4 Cup(c)  dijon mustard
1/4 Cup(c)  sugar
1 Teaspoon(t)  oregano, dried
1 Teaspoon(t)  black pepper
1 Teaspoon(t)  salt
1/4 Clove(clv)  garlic
1 Cup(c)  cottonseed oil
12   tomato wedges
32   croutons
8 Slice(sli)  bacon
4   hard cooked eggs
8 Cup(c)  salad lettuce
4   boneless chicken breasts
1 Cup(c)  red wine vinegar
1/2 Teaspoon(t)  ginger, ground
1 Teaspoon(t)  garlic, granulated
1 Cup(c)  red wine vinegar
3 Cup(c)  pineapple juice
1 Cup(c)  sherry
1 Cup(c)  soy sauce
2 Cup(c)  brown sugar

Preparation

To prepare marinade: In a large bowl, combine the brown sugar, soy sauce, sherry, pineapple juice, vinegar, garlic and ginger. Mix well. This makes enough marinade for 6 chicken breasts. If you wish to store the marinade, only use enough liquid to cover the chicken in this recipe, and store the rest of the unused marinade in a covered container. The marinade stays fresh for one week. Prepare the marinade and marinate the chicken, for at least 3 hours. Grill the chicken over medium heat for about 5 to 7 minutes on each side. Place the lettuce on a large plate. Slice the chicken and place it on top of the lettuce. Garnish with the egg, bacon, croutons and tomato wedges. To prepare the vinaigrette: Combine the oil, vinegar, garlic, salt, pepper, oregano, sugar and mustard in a blender. Whisk until fully blended. This makes about 2 cups. Add the vinaigrette to the chicken salad or serve it on the side.
