Grilled Lemon Butter Scallops Served In The Half Shell

This is a very striking dish, as the scallops are served on the half shell, still sizzling from the grill. This is a decadent recipe that we save for our close friends.

1/4 Cup(c)  unsalted (sweet) butter, diced
8   scallops, prepared on the half shell
3 Teaspoon(t)  fresh parsley, chopped
1 Dash(ds)  salt
8   lemon wedges, to serve
1 Dash(ds)  pepper

Preparation

Preheat the grill, or broiler, to high. Melt the butter in a small pan over a medium heat. Continue to heat it gently until it is pale golden brown. Remove the pan from the heat immediately. The butter must not be allowed to burn. Arrange the scallops in their half shells in a single layer in a large casserole or a shallow roasting pan. Brush a little of the brown butter over them. Grill, or broil the scallops for 4 minutes. It will not be necessary to turn them. Pour over the remaining brown butter, then season with a little salt and pepper and sprinkle the parsley over them. Serve immediately, with lemon wedges for squeezing.

Additional notes

If you can't get scallops in their shells, you can use shelled, fresh scallops. Be certain to cook them on the day of purchase.
