Grilled Shrimp With Apple Ginger Barbecue Sauce

Ingredients

1 1/2 Tablespoon(T)  low-sodium chicken broth
1/4 Cup(c)  minced onion
1   garlic clove, minced
3 Tablespoon(T)  grated fresh gingerroot (2 inch piece)
1 Tablespoon(T)  sesame seed
1 Cup(c)  applesauce
3 Tablespoon(T)  low-sodium soy sauce
2 Tablespoon(T)  dry sherry
1/4 Teaspoon(t)  ground pepper
1 1/2 Pound(lb)  shrimp
1   apple juice or water, if needed

Preparation

Heat the broth in a medium saucepan  Add the onion, garlic, and ginger.  Saute for 10 minutes or until lightly brown.

Add sesame seed and cook for one minute to toast lightly. Reduce heat. Add applesauce.  Stir well. Add soy sauce, sherry, and pepper. Simmer uncovered for 20 minutes, stirring occasionally. If mixture is too thick, add a few tablespoons of apple juice or water.

Peel and devine shrimp.Thread on skewers. Brush with sauce.  Grill until pink and just cooked through, about 10 minutes.  Baste and turn every two minutes.  Serve with remaining sauce.

This is really delicious. I used water instead of apple juice for added moisture.
