Recipe Description
Swordfish steaks are very easy to grill, and make a great dinner choice for summer dinner parties. The olive and basil relish makes an incredible topping, with just the right balance of flavor.

Ingredients

4   swordfish steaks, each 1 inch thick
2 Tablespoon(T)  extra virgin olive oil
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  white pepper, ground
3 1/2 Ounce(oz)  whole grain brown rice
1 Cup(c)  olive basil relish
1/2 Cup(c)  mixed baby greens

Preparation

Preheat grill to 350 degree to 400 degrees F. Brush swordfish evenly with olive oil. Sprinkle with salt and pepper. Grill swordfish, covered with grill lid, over medium high heat 4 to 5 minutes on each side, or to desired degree of doneness. Keep warm. Prepare rice according to package directions. Place rice in a medium skillet, and stir in 2/3 cup Olive Basil Relish. Cook over medium heat 1 minute or until thoroughly heated. Divide rice mixture between 4 plates. Top each with 1 swordfish fillet. Spoon remaining Olive Basil Relish over swordfish fillets and rice mixture. Top fillets evenly with mixed baby greens. Garnish, if desired.
