Grilled Tuna Steaks

8   scallions, washed and dried
1   salt and pepper to taste
6 Tablespoon(T)  sesame oil
4   tuna steaks (8oz each) 1" thick
1   fish
1 Dash(ds)  hot pepper sauce
1 Tablespoon(T)  fresh ginger, minced
2 Tablespoon(T)  sugar
4 Tablespoon(T)  rice wine vinegar (or white vinegar)
2/3 Cup(c)  soy sauce
1   dipping sauce


Combine all dipping sauce ingredients and mix well. Set aside.

Rinse tuna under cold water. Pat dry.

Rub steaks lightly with oil and sprinkle with salt and pepper.

Over a medium-hot fire, grill steaks for 3 minutes a side, being careful not to overcook.

Check for doneness by bending one of the steaks gently and peeking inside, looking for a slight translucence in the center.

Remove steaks from grill.

Meanwhile, rub scallions lightly with oil, sprinkle with salt and pepper, and place on the grill.

Grill scallions about 4 minutes total, rolling around occasionally so that they get grill marks on all sides.

The white portions should be lightly browned.

Remove scallions from the grill.

Serve each tuna steak accompanied by two grilled scallions and a small individual bowl of the dipping sauce.

Great tuna steak recipe. The tuna steaks were nice and moist. They were not dried out at all.
