When ham goes on sale, buy one and chop half, and slice the other. Freeze in freezer bags up to 4 months, and use it in recipes like this.

Ingredients

3 Ounce(oz)  evaporated milk
2 Tablespoon(T)  grated parmesan cheese
1 Cup(c)  frozen peas, thawed
1 Cup(c)  chopped ham
1 Cup(c)  shredded swiss cheese
3 Drop(dr)  hot pepper sauce
1 Tablespoon(T)  corn meal
1/2 Cup(c)  sour cream
3   eggs
1/8 Teaspoon(t)  pepper
2 Tablespoon(T)  flour
1 Tablespoon(T)  olive oil
1   onion, chopped
1   9 inch pie crust

Preparation

Preheat oven to 375°F.

Sprinkle cornmeal evenly over pie crust.

Bake pie crust for 5 minutes until set.

Cool on wire rack while preparing filling.

In heavy skillet, cook onion in olive oil; cook and stir until crisp-tender.

Sprinkle flour and pepper into pan and cook and stir until bubbly, about 3-4 minutes.

Add evaporated milk to pan and bring to a simmer, stirring constantly, until sauce is thickened . Cool sauce in refrigerator.

In large bowl, beat eggs with sour cream and hot pepper sauce.

Add cooled sauce and Swiss cheese.

Place ham and peas in pie crust and pour egg mixture over.

Sprinkle with Parmesan cheese and bake at 375°F for 30-40 minutes or until pie is puffed, set. and golden brown.

Let cool for 5 minutes, then slice to serve.
