Recipe Description
Traditionally prepared to celebrate the Jewish holiday of Purim, these cookies represent the three cornered hat worn by the villain Haman, who tried to murder the entire Jewish population of Persia.

1 Cup(c)  lekvar (prune or apricot butter)
1 Teaspoon(t)  vanilla extract
1 Teaspoon(t)  lemon rind, grated
3 Tablespoon(T)  milk
1   egg
1/3 Cup(c)  sugar
2/3 Cup(c)  butter, softened
1/4 Teaspoon(t)  salt
3/4 Cup(c)  whole wheat flour
1 1/4 Cup(c)  all purpose flour


In a medium bowl or on a piece of waxed paper, stir together both flours and the salt. In a large bowl, cream the butter with the sugar. Beat in the egg, milk, lemon rind and vanilla. Beat in the flour mixture. Flatten dough into two 4 by 6 inch rectangles. Cover with waxed paper and chill 1 hour or until fairly firm. Preheat the oven to 350°F. Grease 2 large cookie sheets. Using a floured rolling pin on a well floured board, roll 1 of the chilled dough rectangles to 1/4 inch thickness. Cut the dough into circles with a 3 inch round cookie cutter. Place 1 rounded teaspoon of Lekvar in the center of each cookie. Brush the edges of the dough with water. Lift the sides of the dough so that it forms a triangle where the filling shows through the center. Pinch the edges of the dough to seal. Place on prepared cookie sheets. Re-roll any dough left after cutting out the circles. Cut out additional circles to make cookies. Fill and fold as described. Repeat with remaining chilled dough. Bake 15 to 20 minutes or until browned on the bottom.

Additional notes

Variation: Use poppy seed pie filling (available in cans) instead of the Lekvar.
