Hanukkah Rice Pancakes

Traditionally served on Hannukah, rice pancakes are a delightful alternative to plain rice as a side dish and can be served year round.

Ingredients

3 Tablespoon(T)  granulated sugar (less or more depending on your taste)
1 Cup(c)  vegetable oil
1/2 Cup(c)  slivered almonds
6   eggs, slightly beaten
1 Cup(c)  italian rice
2 Teaspoon(t)  lemon rind, freshly grated
1 Cup(c)  dark, seedless raisins
2 1/2 Cup(c)  water
1 Teaspoon(t)  salt

Preparation

Place the rice in a saucepan with 2 1/2 cups of water and the salt. Bring to a boil. Lower the heat to simmer, cover and cook, without stirring, for 30 minutes, or until the rice is well done and quite dry. Remove from heat.

Add raisins, nuts, and lemon rind and stir. Cool for at least half an hour.

Add eggs and mix well.


Heat half the oil in a large frying pan.

Drop the rice mixture into the hot oil by rounded tablespoonfuls.

Fry 2 to 3 minutes, turn and fry another 2 minutes or until frittelle are golden brown on both sides.


Transfer to a serving plate lined with paper towels. Place another piece of paper over them.

Keep on stacking frittelle with paper between layers.

Add remaining oil as necessary until mixture is used up.

When you're through with frying, remove the paper towels and serve frittelle hot, plain or rolled in sugar and cinnamon.
